It's been raining nearly all day...we needed it. But it makes it a bit messy dealing with the chickens and Paula with the horses. Such is life on a "farm" :-)
I cooked the goat today. Couldn't find a recipe that sounded good to me so I just sautéed it like a beef roast and cooked it in the Instant Pot. Turned our absolutely YUMMY!!!
Lanny and I took a trip down to the IGA and they nearly always have great meat prices and sales, so I bought 12 pounds of ground beef and a box of patties (plus some steaks for later...). I like to cook it all and package it for the freezer so I can grab it later for a quick meal... I fried it all up and separated it into 10 nice, full cartons for making spaghetti sauce, chili, or whatever... and I fried up the 24 patties to freeze for quick burgers... I have a vacuum sealer so that at any time I can pull them out and heat them in boiling water and they will taste like they just came off the griddle.
Everyone loved the goat meat. I made mashed potatoes, roasted okra and gravy and Mom and Dad both ate seconds of the meat. I think we will definitely be raising meat goats!!
